CHIMICHURRI STYLE DRESSING WITH DIJON MUSTARD

Try this Argentinian inspired sauce to liven up any of your meats, fish, salads and sandwiches.

Ingredients

  • 4 good quality tomatoes

  • 2 shallots

  • ¼ teaspoon smoked paprika

  • 1 clove garlic minced

  • 100ml good quality olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon Worcestershire sauce

  • Half a teaspoon ground cumin

  • Half a teaspoon ground coriander

  • Salt and pepper

  • 1 heaped teaspoon GRAHAM’S Dijon mustard

  • 1 cup mix of parsley and coriander chopped

Method

  1. Quarter the tomatoes, then cut out the watery flesh on the inside and set that aside (freeze and use when making pasta sauce).

  2. Dice the remaining tomatoes into small pieces.

  3. Finely dice the shallots.

  4. Mix the minced clove of garlic, oil, red wine vinegar and Worcestershire sauce together.

  5. In a mixing bowl add the chopped tomatoes, diced shallots, cumin, coriander, salt, pepper, GRAHAM’S Dijon mustard and the freshly chopped herbs. Stir gently to combine.

  6. Add more oil or seasoning to taste.

  7. Serve over salads, grilled meats such as steak/lamb/chicken or liven up some grilled white fish.
