SPICY NDUJA PASTA WITH BASIL & WHOLEGRAIN MUSTARD

A super quick, 6 ingredient mid-week meal that packs a punch!

Serves 2

·       150g pasta of choice (recommend fusilli or penne)

·       75g nduja (or any spicy sausage – casing removed)

·       ¼ cup white wine

·       ¼ cup double cream

·       1 tablespoon GRAHAMS wholegrain mustard

·       Bunch of basil thinly sliced

·       Dash smoked paprika (optional)

                                                                   

Method

  1. In a pot of salted boiling water, cook pasta.

  2. Heat a heavy based pan to a medium heat and add a teaspoon of oil.

  3. Add 75g of nduja/spicy sausage and break it up with a spoon, frying until golden brown, add a dash of smoked paprika if using, and pour in the ¼ cup white wine.

  4. Continue to stir until half of wine has evaporated.

  5. Add in the ¼ cup double cream and the tablespoon of GRAHAMS wholegrain mustard and stir.

  6. Drain the pasta and add to sauce. Stir to coat the pasta in the sauce and add the freshly chopped basil to finish. Enjoy!
